This is the most juicy, colourful salad we will share in the recipe book. Packed full with an amazing 8 of your daily portions of fruit and veg and bursting with flavour, texture, vitamins and minerals (not to mention juice).

Ingredients: (serves 2)

  • 1 quarter watermelon
  • 1 yellow pepper
  • 1 ripe avocado
  • 2 cups of strawberries
  • 2 apples
  • 2 oranges
  • 2 cups of organic spinach
  • 1 pomegranate

Equipment:

  • 2 serving plates or bowls
  • 1 sharp knife
  • 1 spoon (optional)
  • 1 (or more) napkins (your fingers and lips will thank me)

Instructions:

  1. Take your orange, peel and layout on the plate or dish
  2. Then using your knife slice the avocado pomegranate and pepper in half (removing the pepper core) and serve
  3. Slice up the apples and serve one onto each plate
  4. Measure out 1 cup of strawberries and add to the mix
  5. Add a good handful of spinach (wash first if needed) and enjoy!
