A low calorie, high fibre and very filling soup, perfect for cold days, and comforting feeling with absolutely no calorie guilt. With it’s great taste and chunky texture it is a great and simple soup that you simply must try.

Ingredients:

  • 200g of Kohlrabi
  • 1/2 an onion
  • 200g of cauliflower
  • Rapeseed oil

Equipment:

  • 1 oven
  • 1 Hop or stove
  • 1 baking tray
  • 1 wok or frying pan
  • 1 pot
  • 1 blender or food processor
  • Measuring scales
  • 1 sharp vegetable knife
  • 1 Bowl
  • 1 table spoon

Instructions:

  1. Pre heat your oven 200 degrees Celsius
  2. Weigh out 200g of kohlrabi and cauliflower and slice them up using your knife
  3. Add to a baking tray and cover them in a small amount of rapeseed oil
  4. Roast the veg for 20 minutes
  5. While they roast u your onion in half and slice it up using your knife into large chunks
  6. Stir fry the onion in a wok for 6-10 minutes with another small amount of rapeseed oil
  7. Add all of the ingredients into your blender or food processor and blend until it is thick and soup like with some chunks left over
  8. Add the thick soup to a pot and warm on the stove for a few minutes
  9. Add parsley and a pinch of sea salt to garnish (optional)
  10. Serve and enjoy
